St. John is a cafe on St John Street in Smithfield, London, Britain. It was open in October 1994 by Fergus Henderson, Trevor Gulliver and Jon Spiteri, in house of a previous bacon smoke house.St John has turned into a church to UK cooking, and has played a gigantic part in its direction in the last fifteen years. St John is also a regular on the planet's fifty Best Cafes list. Fergus Henderson and his partner Trevor Gulliver have been pleasing fervent fans from all over the world for fifteen years with classics like Roast Bone Marrow & Parsley Salad, or what about a stonking lemon sorbet with a slug of Polish vodka. This is reasonable, venturesome, damn good eating. Under Henderson's direction as head cook, St. John has focused on "nose to tail eating", with an attention to offal and other slices of meat infrequently seen in restaurants, frequently reclaiming normal UK recipes. Everyday dishes include pigs ' ears, ducks ' hearts, trotters, pigs ' tails, bone marrow and, when in season, squirrel. As result, St. John has developed a following among gastronomic circles - "cooks, gourmets, food writers and cooks on sabbatical, traveling maybe through the great multi-starred restaurants of London, France and Spain frequently stop there for a little taste of the real". St. John has won many awards and accolades, including Best English and Best overall London Cafe at the 2001 Moet & Chandon Restaurant Awards. It has been solidly placed in Restaurant's yearly list of the Top fifty eateries in the world. Most lately it was placed 43rd, down from 14th in the 2009 rankings. It got given a Michelin star in 2009. |
